Parging IMHO is best left to the pro's as it takes tallent to get stuff to stick to vertical walls and still look good. Thorough Seal or some of the other Block sealers don't require as much talent.
JP, I don't know if you already evaluated this or not, but have you thought about running piping around the perimeter of the shop with quick change couplings for air? A couple by the doors could help with out doors air fills etc, and the middle and front. Easy to do at this stage, before closing the walls up.
Yes....Joe will need somewhere to sit and enjoy his drink while you are wrenching.
Step one would be to get a much bigger air compressor...
And maybe a couch...
